Your vineyard
The very essence of life in the Languedoc is the cultivation and enjoyment of "les produits du terroir" - the locally produced wine, olive oil, cheese, honey, vegetables and preserves. The wines of St. Laurent enjoy an increasingly impressive reputation, notably the local Cellier des Demoiselles, and the Chateau de Caraguilhes. As an owner at St. Benoît, you receive a share in the ownership of the on-site vineyard and olive grove, so the heartbeat of the region becomes an intrinsic part of your experience. You will have the opportunity to participate in the centuries' old traditions of wine-making and olive pressing: harvesting, pressing, tasting. The Olive Grove
Beside the vineyard is a three-acre olive grove producing the venerable Lucques de Bize. Recognized by the connoisseur as the finest of all olives, this plump green fruit has a fine pulpy flesh with a delicate flavour of butter and hazelnut. Garrigae has worked with the Oulibo olive co-operative to create a tableau of gourmet products from the fruit of Les Jardins de Saint Benoît. Like the grapes of a fine vintage the 'green gold' is gathered by hand, for curing and pressing into the finest virgin oils, tapenades and table olives including the showpiece cold pressed oil Le Cuvée Spéciale Les Jardins de Saint Benoît. Our guests at Les Jardins have the opportunity to immerse themselves in the lifecycle of the olive - from planting to harvesting, pressing to manufacture.
Medieval Gardens
For centuries, the medieval Gardens of St Benoît have been a source of local produce and a retreat for relaxation and reflection for the local community. Now, together with the town council, Garrigae is lovingly restoring the patchwork of gardens as a natural haven to be enjoyed by villagers and resort residents alike. Each garden has been restored as a distinct space with its own unique atmosphere - a quiet place to read a book; a herb garden alive with the scent of lavender, thyme, and rosemary; a water garden; a private arboretum for morning yoga or a shady glade for a picnic with the children. The gardens also grow organic vegetables for the restaurant, and give children the chance to learn about cultivating natural foods.
