There's so much more to the South of France than most people imagine. Beyond the famous playgrounds of St Tropez and Cannes stretches a sumptuous landscape of vine-clad hills, mountains dotted with Cathar castles, towns steeped in history, monumental Roman ruins and, of course, the magnificent tree-lined Canal du Midi, which snakes its way lazily from the Atlantic to the hot shores of the Mediterranean.
